Authentic Chaozhou Food 地道潮州美食
Chaozhou Braised Goose is one of the most famous dishes from Chaozhou that is well loved all over China. The whole goose is slow braised and then thinly sliced. The meat is very tender(嫩的), succulent(多汁的) and every bite is an explosion of flavors.
卤鹅是全国人民都爱吃的潮州最著名美食之一。整只鹅经过慢慢的卤制后再切成细片,肉质无比鲜嫩,多汁,每嚼一口无不爆发出美妙的香味。
In the past, the goose came with loads of feathers on it so you had to soak the goose in a pot of water then assigned one or two family members to pluck(拔) the feathers. Nowadays, it is so much easier for us to braise a goose as all the feathers are removed(除掉) and you can buy a decently clean goose either in the wet markets(湿货市场) or supermarkets.
以前买回来的鹅是没有拔毛的,所以你得安排一两位家人去帮忙拔鹅毛。现在要买一只鹅来自己卤制要简单很多,因为我们可以直接从传统湿货市场或者超市买回来整只已经拔好毛的鹅。
Once the goose is braised for about 45 minutes or an hour, the aromatic smell(香味) of the goose in the braising liquid(卤汁)will permeate(弥漫) the whole house. Somehow, you will definitely begin to feel hungry.
将鹅卤制了45分钟后,卤汁里面鹅的香味就会弥漫整个屋子。此时无论怎样,你肯定会觉得自己饥肠辘辘,嗷嗷待哺了。
