地道潮州美食
Char Kway Teow(炒粿条) or Stir-fried Rice Noodles, is considered one of the most popular street-hawker dishes in Chaozhou and is also very popular in Indonesia, Malaysia, Singapore and Brunei.
炒粿条被认为是潮州最出名的街头小吃之一。它在印度尼西亚,马来西亚,新加坡和文莱也是广受欢迎。
The dish is commonly made out of flat rice noodles about 1 cm in width and stir-fried in pork lard(猪油)with other ingredients such as eggs, beef,prawns, bean sprouts(豆芽), Chinese broccoli(芥蓝),spring onions and so on. In Penang (马来西亚槟城), Char Kway Teow is commonly served on a piece of banana leaf on a plate so as to enhance the aroma on the noodles.
这道小吃通常选用宽度约为一厘米的粿条加上猪油用大火爆炒,配上鸡蛋,牛肉,虾,豆芽,芥蓝,青葱等。在马来西亚的槟城,炒粿条上盘的时候还用香蕉叶垫着,使粿条的香味更加撩人。
It is said that, when the dish was first invented, it was mainly served to laborers and it was usual to stir-fry rice noodles in port lard without eggs or meat.The high fat content and low cost of the dish made it attractive to these people as it was a cheap source of energy and nutrients.
据说这道美食最初是专门给体力劳动者准备的,而且只用猪油爆炒,没有加鸡蛋和牛肉。其丰富的脂肪以及低廉的价格使它广受体力劳动者的欢迎,而且它也充分满足了体力劳动者们对能量和营养的需求。
Nowadays, we eat it because it tastes so good. It is definitely a dish that you can’t leave Chaozhou without trying.
而如今,我们品尝这道小吃是因为它真的非常美味。来了潮州,如果没有品尝地道的潮州炒粿条,那确实是白白走一遭了。
